I don't think you will find anything that stretches over the entire period, and if you do it will be shallow and disjointed. Sounds to me like what you want are biographies. Frederick the Great, Napoleon, Alexander Suvorov, Wellington, Paul von Lettow-Vorbeck, Genghis Khan/Subutai, Heraclius, Basil II, Khalid ibn al-Walid, Timur/Tamerlane, Nader shah. There are also tons of books about Manstein and Guderian, and I don't think it will be too difficult to find something on Zhukov/Vasilevsky/Rokossovsky.

There are several books on Lettow-Vorbek that /his/ likes to recommend and I doubt you will be able to find anything more relevant than this, fighting in the middle of Africa with no support during ww1, at a great manpower disadvantage, and manages to win every single battle throughout the war. A couple of them are on this chart.
Peter the Great by Robert Massie also goes into depth about the strategy and movements of Karl XII and Peter, this war is usually counted together with Napoleon and Hitler as among the great invasions of Russia.
Ivan the Great of Moscow and Ivan the Terrible also fought a string of very competent wars to unite Russia and destroy the tatars.
