Well for DFW they were literal lobsters and are connected to animal rights due to the way we presume that they feel pain and the fact that they're not easy to kill humanely due to how their nervous system is spread out or something like that.

For Peterson iirc it's a matter of hierarchy and how lobsters feel wellbeing depending on their position in it (we presume based on their release of serotonin or something like that).

For D&G, God is a lobster or a double pincer because he captures life in strata and between minimum and maximum thresholds and blocks it. D&G are vitalists of some sort so life is metaphysically free "from the start" and every object in the world is a composite that captures life and each objects has many thresholds in which it stays together (extensive limits, intensive limits such as melting or boiling or freezing points etc.) so the lobster God captures the becomings of the pluralistic chaosmos which is an egg. Too many food analogies.
