Asking "what are fields" and "what is energy" is pretty much meaningless. Physics doesn't say what something is, it describes them. The only time physics says what something "is" is when it describes something in terms of something more fundamental, but it then doesn't say what the fundamental thing "is" only describes its properties. So unless the ideas of fields and energy are unified into a more fundamental idea the same way physics unifies almost all forces into four fundamental forces and then unifies two of the fundamental forces into the electroweak force, it will have nothing meaningful to say about what energy "is." If you want to talk about that, you will have to resort to Philosophy, and say something like, the state of the universe is pure nothingness and then some principle orders it into fields and energy and space and time.
