There are a few, but I'll elaborate on a few.
* I want to get into ceramics, but a low-end wheel/kiln/materials is easily $1k or more. Local community colleges don't have courses on it, although I might be able to try one of the major universities an hour away.
* Expand my book collection. I've gotten to the point where I have more books than shelf space, and by the time I retire I hope to have a home library/reading room.
* Retire from software during middle-age to a low-level museum or academic gig, most likely some form of tech support. While enjoy working on some bleeding edge items, it's pretty niche and I'd like to work in the humanities. I've taken a few online courses/lectures and read about it after work.

* Careers. If money weren't an issue I'd jump from job to job forever (butcher, librarian, actuary, etc). Partially for the novelty, partially because I hate the idea of being locked into one thing for 30 years.
* Boring people. I don't necessarily have to be interested in the same things as other people, but if you clearly don't give a shit about anything when the total sum of human knowledge is at your disposal, you aren't worth talking to. And none of this "oh I'm into cooking" says the guy who made calamari one time five years ago, or "I love to travel" says the guy who does fuckall on a beach for two weeks.
* Birds. Dinosaurs are cool, but birds are fucking weird. They shit all over the place, are complete assholes, and live for 30+ years so you can never get rid of them. Fuck birds.
