Are there any nonfiction books on the act of creating art? Everything I've read on the topic comes from philosophers who are the last people on earth who should be talking about art.

This is good advice. It's longer than the typically suggested entry points of TCoL49 or IV, but it does a much better job of introducing Pynchon's style. Plus there's a direct connection between its central themes and those of GR.
