Apocryphon of John is pretty good, you should read everything in the Nag Hammadi library. The Gospel of Thomas is probably the best.
You should also read Platonic + Neoplatonic literature, because Gnosticism stemmed from that. The whole idea of the "Pleroma" or the "perfect world, the Aeons" is Platos world of forms in themselves. The Wisdom literature of Solomon (especially the Proverbs) is also hugely Gnostic.

The whole "God is evil" meme is more of a larp by modern Gnostics. We dont really think Yaldabaoth is "evil", just more of a chaotic force of nature (prideful/ignorant, but not necessarily evil) that does whatever he wants. we just focus on escaping the cycle of reincarnation.

There is a difference between the two major schools of Gnosticism, Sethianism/Valentinianism, the Sethians are generally more opposed to Yaldabaoth than the Valentinians are. They exaggerated his evilness a fair bit, which is why Plotinus wrote a book against them. The Apocryphon of John you read is a Sethian text.
