>how far did the star wars extended universe end up going before disney axed it?

In the book timeline they went all the way up to the grandchildren of Han and Leia Solo (which is roughly 45 years after the OT). The Legacy comics jumped even further ahead and went 150+ years past the OT with Luke's great grandson and Han and Leia's great great granddaughter being the main characters.

>the original Thrawn trilogy was pretty good but were any other parts of it worth reading?

The X-Wing novels are all pretty great. There are also some really great prequel era novels like Darth Plagues and the Darth Bane Trilogy. But for post ROTJ stuff the pinnacle is the NJO (New Jedi Order). It's a 19 book series that gets some flak for having weird antagonists but it's definitely worth your time. It was originally planned as the ending for the post ROTJ timeline and it shows because everything after it is just crap. Legacy of the Force and Fate of the Jedi that followed it are barely readable imo and only worth it if you really want to see where everyone ended up before the buyout happened.
