Do you just want to get into theatre in the sense of knowing how it works? Start by visiting local theatres, reading critiques, dramatic texts, and perhaps history and theory of theatre and acting.
If you want to become an actor yourself, you don't have to read shit, you should join a theatre school (or however it's called, I'm esl).

Why the fuck are people unable to state who the author is of some lesser-known book with a generic ass title?

For meme-tier /lit/-core, you only need the Greek dramatists (three tragedians and Aristophanes, a comediographer) and Shakespeare.
Other historically notable and worthwhile dramatists are:
Plautus and Terence (defined comedy for many centuries)
(medieval era had fairly little theater)
the English Renaissance - Marlowe, Kyd, Ben Jonson...
Spanish Baroque - Calderon de la Barca, Lope de Vega
French Classicism - Corneille, Racine, Moliere
afterwards - Goethe (not only his Faust!), Chekhov, Ibsen (the latter two are especially important and influential for modern theater, also read about Stanislavsky), Pirandello, Brecht, Ionesco

That's an unusually good list by Scaruffi's standards, but I really doubt he composed it himself. In most cases outside of his music criticism, he only seems to collate other people's lists.

Can anyone recommend me a book on appreciating theatre (as a reader of plays)?

I'm trying to find satisfactory answers to questions like 'how do plays work?', 'how did plays evolve (in the west) from their ancient beginnings to their modern form?', and 'what makes a good play?'.

Looking around there's lots of texts on staging - acting and directing and so forth - but not so much on plays as literature. There's also a lot of theorists and philosophers who think about theatre, but as a beginner I'd rather read a broader but concise introduction by a single author and not work through a reader/anthology of texts.

I suppose I'm after something like 'Theatre: A Very Short Introduction' but a bit more substantive.
