Of course. Consider it your first draft, then come back to it when you're better at English, and polish it up into a more idiomatic and natural version.
You're probably overthinking it, though. If you can already "think" in English, then it won't sound like a clunky translation made by a newbie learner.

Depends. If you can select text in the PDF, try pdftotext from pdftools. Otherwise, you will need to OCR it. Extract the images with pdftopng or pdftoimages, then use Tesseract.

Note, Tesseract takes ONE image in output, and writes to ONE output file. So you need to use something like

for %f in (*.png) do tesseract %f %f.txt

Then you need to join all those text files together. If you specify a single file name, it'll get overwritten over and over. Also, for whatever reason, Tesseract appends the byte 0xFF at the end of a file, so you may need to get rid of that too.

Either way -- and this is the easy part -- once you have extracted the text, format it according to Markdown rules (they're pretty easy). https://daringfireball.net/projects/markdown/basics

Of course, check for typos, etc. Finally, use Pandoc to convert the Markdown file to EPUB.
