you forget one important factor: carnivore diet. Whether he had autoimmune reactions that carnivore helped with or if he was just being hypochondriac, a zero carb diet is KNOWN to be very stress inducing, which is degenerative in the long term. Especially since he's not doing the well thought out carnivore diet that includes organs, varied cuts and maybe fruit, but only consumes steak and salt. If you then pile immense mental stress on top of that, with an already weak and aged physiology, it's just a matter of time until you break. I'm pretty sure this is much more important to his case rather than some sort of philosophical break
