The references to Sheol are murky at best. Jesus saying "my father's house has many rooms" probably refers to the Kingdom of Heaven on earth. All of Paul's letters seem to indicate that 1st century Christian's believed that believing in Jesus meant you sprang up out of the ground with a reformed body and got a special place in the Earthly Kingdom of Heaven. No indication whatsoever that your "soul" left your body then came back into a new one.

Jewish and Christian theologians worked Platonism into their religion using a few scant ambiguous lines of scripture. It's painfully obvious if you take a fresh looks at the Bible like OP did.
