What book/series has the greatest sense of "Magic as a Science" or Fantasy-Science?

Like focusing on Alchemy (herbal, not equivalent exchange), Magic experiments, harnessing magic for some kind of power - but not in a futuristic setting; all that sort of stuff.
Not looking for Sci-fi with Magic, more some kind of fantasy that has some (in-setting) scientific-functional elements.
It's hard to explain, but I've been looking for something with this as a theme and I kept on getting "Read the Witcher" and nothing else, surely there must be more.
