I am a bit interested being a almost reformed fantasy nut, and a current Byzantine nut.

I looked into a lot of this myself.

The originals, if there were any, are all lost of course, but the oral tradition kept them going. Easier to burn a scroll/book than a human you suspect of knowing a book or two.
So whenever they were first written down, there were around 30+ stories/gospels floating around (Including what now call "gnostic gospels" but they're just as legit as the remaining revered four) Years around 100~ to 250AD~ little congregations start spreading around to Egypt, Armenia, Asia Minor, Greece, and the rest of the Roman empire.
Till Constantine found it, and moved the capital city to Byzantium, etc.
tl;dr: Greek. Unless you want to find some in Aramaic.
