Because prose is boring.
Because Yeats was traditionally a poet who then experimented with his style. Because poetry is a challenge of saying as much as you can with as little as possible, with the meter enhancing certain effects and giving it rythym. Because extremely short prose isn’t something that gets published, and all poetry has its roots in oration, and metered lines help the reciter memorize the poem.

The Second Coming has a super interesting structure. The second half is a non-rhyming sonnet, but the turn happens at the first line, which is still 8 lines into the entire poem. Things fall apart and the centre cannot hold, even in poetic structure
