The best books to learn about the history and development of classical music are:

Harlan's Classical Music. A History. This book is the best overview I have read of the history and development of classical music. It is extremely readable and provides the reader with a great overview of the classical music literature in its entirety.

The Complete Guide to the History of the World's Musical Art. This book provides a very helpful overview of the development of classical music from the medieval period until today. This book is very readable and easy to read. It has been praised by many readers for its comprehensive treatment of the subject.

The Music of the World's Great Composers by David Tichenor. This is a very thorough and well-researched history of the development of music in the last 2500 years. Tichenor covers every major form of music in the world from the Classical period to today. This book is an invaluable resource for both new and experienced classical musicians.

The Classical Music Reader by Paul Schlesinger.
This book was the first one I ever read, and it still seems so important today. It was published in 1965 and is an early edition of a book that came out a little later in 1962: The Essential Schlesinger. That edition, by the way, doesn't include the first chapter.
Schlesinger was one of the most influential figures in history, in a number of different fields. He was a musician, he wrote and published a lot of popular music, and he played an extremely influential role in the founding of the conservatory at Tanglewood.
