Qur'an, mos translations are fine. For most purposes, Saheeh International is good, but some of the eloquence is lost, example: it translates "the colour of Allah" or "the baptism of Allah" with "the religion of Allah". If you're serious about really delving into the Qur'an, you should refer to multiple translations, Abdullah Yusuf Ali's one is good.

For hadith you can read Riyadh Al-Salihin which covers much of Islamic ethics, values and principles, the chapter on Knowledge is especially relevant.

Ibn Taymiyya Expounds on Islam is a great compilation of essays portraying the orthodox perspective of Islamic theology, life, society and governance.

"The Kite Runner" isn't written by a Muslim, also the writer's son trooned out, this tells you all you need to know him. If you sincerely want to learn about Islam, just read the Qur'an and Al-Nawawi's 40 Hadith. If you want more, read Ibn Taymiyyah Expounds on Islam.

There is no Islamic analogue for "Christian literature". Muslim scholars almost exclusively write non-fiction and poetry

I mean, you can start with Classical Ash'arism and contingency arguments, which is impressive. But Ash'arism is really something that was new, the core of Islam is pure monotheism while holding unto the principle of bila kayf(essentially non-speculation justified rationally). For this perspective, I'd recommend Ibn Taymiyyah Expounds on Islam.
