Because you know fuckall about French culture, and then make assumptions about it which angers the French.
It's largely in the Anglophone bubble that people think we're too proud of our language or overly chauvinistic, which you then can't test because you can't speak with French people.

Why are we considered overly proud of our language?
Because the French king wanted to assert his political dominance by making French the main language of nobles instead of Spanish.
He created a poetic French, gathering poets (La Pléïade) to poetisize the French language and then force it down as mandatory.
French people have been protective of this new French ever since with various institutes to help them, but not against outside sources or in an overly chauvinistic sense, but against various languages within France struggling to become the main language and causing nobles to reject the French language.

Another reason is that we didn't need any other language inside of the Francophone sphere, holidays are spend in French-speaking countries and low in the French-Mediterraneans, important economic ventures are done in French-speaking cities, etc.
It's only until very recently that we require english to browse the internet and be more global, but we still have little to no english on TV, little to no english literature, we don't listen to english music, etc, there's just no cultural incencitive to learn english.
Young adults speak some english, but it's not enough to carry a conversation, to learn english you actually need to spend time on your own learning the language, and I highly doubt you do much of that in your own free time.

Another reason is the French political and philosophical bubble, it's very hard to know what French political parties believe in when you don't know much about the history of French politics, I bet you didn't know that Macron likes to promote political ideas coming from the political groups during the German occupation for example.
We also learn all the French philosophers, even in high school, and they're pretty mandatory reading, which means that even people who read very little are walking around unknowingly quoting Voltaire, Rousseau, Descartes, etc.
