My recommendation would be to start with Geoffrey of Monmouth (not necessarily all of it but at least the part about Arthur) and then try one of the Chretien romances. From there you'll have some of the really foundational stuff and a good taste anyway and you can move in whatever direction you want.

Malory is the most comprehensive telling but it's also very long so I wouldn't recommend diving right into it as a starting point for Arthurian legend if you aren't that familiar
