its because Plato's dialogues are easier to read. Aristotle reportedly also wrote dialogues, but those have been lost. we only have his lecture notes essentially.
even then Aristotle has been insanely influential and insanely important, and the secondary literature for say, commentaries on de anima are similarly saturated as commentaries on any of Plato's dialogues.
