Hmmm... let me think.

After careful deliberation, Latin. More material and avenues of research, more opportunities too. I think they have the three people they need to decipher names on Ostraka dumps and fucking Egyptian papyri they're still picking through. The heyday of Greek language (and Greek culture) is short compared to Rome and the lasting legacy of Latin (e.g. you'd be able to teach the odd medieval class with Latin, even into the Renaissance where Greek certainly had more influence than previous centuries though still much less than Latin in terms of texts produced in the Renaissance era itself, and well after in so far as philosophical and scientific texts are concerned.)
