I like that Sanderson is working very hard on them, but I can't help but feel that things are a bit rushed (e.g., Tower of Ghenjei). I know there is a vast amount to wrap up, even with leaving a plethora of plot threads unresolved, but I really would like him to take his time with the last one and make it the best possible book he could.

I think he's a pretty cool guy. It's interesting and neat to see him acting not as Rand or Lews Therin, but as the Dragon (in the sense that he is aware that he is not a particular person but a particular soul). The whole "you may call me Rand Sedai" part was awesome.
But there is a nagging little suspicion of mine -- not more than a suspicion, and certainly a dubious one at that -- that he is not entirely right in the head. This first started bothering me when I realized there have been no PoVs from him since Veins of Gold. I...Well, I know he has to be all right -- this is nearly the end, and he has been acting completely fine -- but it still bothers me.

I had always suspected (along with a fair majority of WoT readers) that it would be Moiraine's return that taught Rand laughter and tears, but I was wrong.
I presume she learned something of great value while trapped in the Finns' world -- perhaps something related to the Seals, or the Dark One's prison.

You know how people get random cravings for random foods? The mechanism isnt perfect, and people get addicted to fast food, but, my point remains. Its not health to rely on whey protein alone. Yes. I meant the whey to be an example -- a cheap, effective calorie source.

Your hunger analogy is flawed. For most people not in a third-world country, eating is more than a way to stave off hunger -- it is an enjoyable activity.
If the sole purpose of eating were to abate one's appetite, there would be no market for luxury foods, for flavoring, or many or things. Presumably, the most popular food sources would be things like whey protein, which is a great bargain price-wise.
But for those who DO eat solely to satisfy their appetite...why wouldn't they make use of your pill? It does everything that food does for them, albeit more conveniently and cheaply.

Or rather: chemically speaking, what makes one form of happiness different from another?

What do you mean, it won't accomplish the same thing as normal happiness? Don't people typically pursue happiness as an end in itself? If drug-happiness is no worse than "normal"-happiness, then why should it matter?
