The stories do kinda stand on their own but there are some themes that connect them all.

You already mentioned death which is one, the last story called The Dead is a fitting finale.

It's typically difficult to find any philosopher difficult. It helps to know a bit more of where he is coming from. Hegel was a big influence on him even if his views were just a reaction to him

I think its mostly just a cultural thing that changes over time depending on what the current society judges as Important to their culture. Yesterdays low culture might be considered todays high culture.

I feel the same way about Finnegans Wake, its too complex to just read it on surface level and comprehend it but if you spend a minute going into each word you will be astonished by the things Joyce managed to do..

If you understood those other books what didn't you get about the metamorphosis? Its typical Kafka. Try to imagine the story as if Gregor actually just got some crippling disease or something. It could be about how his family using him to bring in money while not actually caring about him, even before the transformation. The guilt of him feeling as if he is just a burden on the family and the way they treat him just makes it an absurd story. Its open to a lot of interpretation.
