Jin Yong is widely considered the king of the genre, so you can’t go wrong with his books. Gu Long is also very well-regarded and a classic author. Not Chinese, but the Singing Hills Cycle by Nghi Vo has some good Wuxia elements in a more contemporary fantasy setting, especially the third book. I can’t really recommend anything contemporary and from China, but if you’re just starting to learn Chinese reading novels is a good way to learn so I’m sure you can find recommendations.

Start with works from Pearl S. Buck's the Good Earth, in many ways it is polar opposite of Red Chamber, where in Red Chamber you start with rich nobility that slowly declining while Good Earth, a poor peasant slowly rising to riches. I suggest if you to try Wuxia genre, Jin Yong's works is to go, or if you want try Chinese take on Scifi, I will suggest Ni Kuang's Wisely series.

The main difference between wuxia/xianxia is wuxia doesn't exactly feature or strive for immortality while xianxia is all about immortality. Most martial arts movies anybody has seen would be considered wuxia. None of this "serving x people or committing x action" nonsense.

No, Xianxia is defined by the pursuit of Immortality. If it's like Xianxia but the hero is fighting for ideals/country/king/emperor/love etc it's Wuxia.
As far as Xianxia goes, the overwhelming majority of protagonists are assholes. Because again, the fundamental rule of the genre is the pursuit of immortality, which is considered borderline evil by definition because an immortal never discharges their negative karma through death and rebirth.

My best friend loves all of that extremely long Xianxia stuff, but I have a hard time getting into it. I much prefer the classic Wuxia novels, since they aren't insanely long and have stories that are relatively grounded in reality

You haven't actually read any real Japenese lit, have you? Because having read both Japanese lit and LNs, I can tell you that there isn't a single LN that comes anywhere close in quality. I still enjoy reading LNs from time to time, in the same way that I enjoy reading Wuxia stuff, but stop deluding yourself into thinking that it's high quality writing
