Probably a mix of her accent and excitement. I personally love her accent and her singing. She is probably training to hide it better during songs. I think it's what gives her songs flavor but it's not for everyone

Horses have no collarbone. Their head and shoulders are kept above their body solely by a series of muscles and ligaments. Were they to ever fail, a horse's head and shoulders would simply fall to the ground, unable to support their own weight.

The effort of a single, dedicated human to manipulate an animal to our whims was excessively high for most animals until the modern day. Before the complete dominance of the human race over nature via technological growth, there was simply no benefit to training the vast majority of beasts.
The presence of animals that had high turnover rates, usefulness to humans, and the inability to run away in the Eurasian continental field is what allowed for the progression of humanity into larger plains. Cows, dogs, horses, cats, sheep and chickens all have the same traits: three to four generations in a single human lifespan that allows them to be trained, the ability to be contained in pens easily without the strength or agility to escape, and the ability to provide either a useful service (dogs and cats as hunters and protectors, horses as beasts of burden) or a valuable source of energy (cow meat and milk, chicken eggs, sheep fluff).
Our competitors in the Americas, meanwhile, only had one beast that could be tamed; the alpaca. And while it is a useful animal, the lack of horses as beasts of burden or other beastial resources to domesticate made it nearly impossible to develop the same style of civilization as that which could develop in the Eurasian region.
