A small css snippet takes care of the overflow. Here it is at the top.
In order to use it, you need to wrap span tags (<span id='overflow'> </span>) around the values you want to limit. These will be cut off at a specific width. See the example, taken from a random director note. Finally, one of the cards. Note how the title is cut off to keep things clean..

It may be that your dates are being treated as 'strings' for some reason. You may be sorting dates alphabetically instead of chronologically.

In my case, the dates look something like this.
"sort Date desc" seems to work fine with dates like this. Not sure if that helps.

Mostly manual still. I've streamlined the creation of new notes even further though, using hotkeys mostly.
Let's say I want to add a new label. I'll click on the uncreated label link to create the properly named blank note. I then move the blank note to the Labels folder by pressing ctrl-m, typing lab, and pressing enter. I then apply the label template to it by pressing alt-e, typing lab, and pressing enter. That sets things up nicely. I then have to paste it the various values. I started using the Various Complements add-on to make this faster.
