That would probably be bottom-feeding sea creatures. Their bodies have such high mercury content that you can get ill from eating them. (It isn't healthy for them either, but they have short lives anyway.)

A certain amount of fat is desirable as "marbling" to add a juicy, flavorful quality to the meat. We personally prefer firm caucasian females in their early twenties. These are "ripe".
