Because credentials. A degree on your resume means "I am smart". Of course having a degree doesn't make you smart at all, but people naturally assume graduates are smarter than non-graduates. Sucks, maybe, but such is life.

"x has a university degree in computer science" vs "y has no degree but spent a few months learning C and Python online" -- realistically there is no reason y couldn't be the superior programmer, but you'd find his claims harder to believe and even if you did believe them you'd have to wait for a while until he proves his skills enough to be trusted. Not practical. Time is money.
