Completely understanding the game and its mechanics takes a long time, but the actual difficulty is quite customizable. I'd recommend 4, better graphics and mods for the Pacific and the Atlantic theatre and easier to mod (3 isn't too shabby either; haven't played 5, but it's supposed to suck). Also, Subsim.com is a very helpful site for beginners.

destroyed the Japanese merchant fleet on their own.
The Japanese navy (who didn't have good sonar and radar
to begin with) for some reason never worked on an
effective counter which made a crucial difference.
