Muramasa's gameplay is faster, more streamlined and casual.
Odin sphere is harder, the gameplay is more sluggish and the latency reminds me a bit of Ghouls andn Ghosts. The story is epic though.

It's pretty fun if you like real-time strategy games.

You're forgetting something that no NES or SNES game had: online multiplayer. This is Vanillaware's first non-turn-based game to feature online multiplayer, which is a lot more complicated to get right than it may look. It's also in a genre that's not so common anymore, so unlike, say, FPSes, it's not just a matter of plugging in some middleware and mostly calling it a day.
Certainly, there's no reason why that would take at least 8 months, especially now that they're being assisted by Atlus, but there are more possible reasons for the extended delay. Perhaps some ideas that had to be scrapped under the old publisher have been revived under the new publisher, or the other way around: the new publisher wants some features added. There's also the release window to consider and the testing, certification etc.
