Something doesn't have to explicitly appear in the stories to be canon, if that's what you're thinking. If George Lucas says something is or isn't canon, then that's how it is (I recently discovered Lucasfilm and fans have a whole system for different "levels" of canon, which is funny to me).

Well my point is that if the official source calls it something, then it is so. If ZUN put out an art book that featured Koakuma named as such, you would consider it canon. Even if the art book was strictly "meta" and didn't contain any in-universe stories. So why isn't ZUN calling her "Koakuma" in an interview good enough to make it canon? In I think the same interview, he revealed some facts about her and her race. Are those not canon?

Touhou has always been a setting where the meta in-universe stuff collides, and I've always liked that. It's not corny if a character breaks the fourth wall or acts out of character or whatever, because the overall mythos is so flexible. If ZUN says Reimu likes fudge, then Reimu likes fudge, and dozens of doujins to follow will feature fudge-eating hijinks.

Exactly. I think Han Solo was originally going to be a lizard man, and lightsabers were going to be standard weapons, and all kinds of crazy things. If it wasn't for other people affecting the creative process--whether through budget issues, production problems or just outright criticism--Star Wars would have been a mess. God knows what would have happened if 1970s George Lucas had the technology and creative control he has today.

But again, back to Touhou. I think ZUN has handled all this really well. He hasn't bowed to fan pressure and that has made the series very likeable. I doubt there's going to be Touhou 17 - Lewdness of Naked Onsen Orgy any time soon. But at the same time he's making agreeable choices and letting fans do whatever they want and interpret his characters however they wish. I think that's rare now, and it's worked out great.
