Xenogears, no question about it.

It has it share of flaws (you'll see once you get to the second disc), but if you have the slightest interest in "otaku related" PSX games you really ought to give it a try.

There's a shitton of FF releases for the PS1.

But, if you want something better, grab yourself a copy of Legend of Mana. All dem quests, dat carefully calculated or randomly dropped map-placement, dat weapons/food/pet creation-system, and all dem allies will keep you awake for weeks. Plus, the soundtrack is pretty nice.
It's a fun, time-consuming RPG.
