I realized I really don't care much for the idea of a single protagonist in fiction.

What are some notable VN that have multiple protagonists? And I don't mean just a short part from the point of view of another character, but something where if you were asked who is the main character, you'd have to list several of them.

Do you think that concept works at all in VN? Or is having a main character necessary? Maybe just in works that require a relatable protagonist in order for the wish fulfillment fantasy to work?

I TOTALLY agree.
You may enjoy stuff like SRW, where there isn't a clear protagonist, even if some people are more prominent than other.
I've only played the OG 1 and 2 for the GBA, but it was half trpg half VN, it has a shitload of text.

And you could say Battler is the MC of Umineko, but not really. He is out of focus most of the time.

See, I have a bit of a problem with this in character-focused VN.

Leaving a real harem end aside, the notion that every girl will find the protagonist attractive just cheapens their character. It feels forced, particularly since the protagonist rarely is an interesting character. So in the end it feels like the girls end up with him not because they find him attractive, but just because he happened to be there, and treated them kindly. It really breaks the suspension of disbelief, and makes one doubt exactly how long their relationship is going to last.

And of course, a lot of VN have the protagonist help the heroine overcome some kind of problem or struggle - on top of enforcing the notion that the girls hook up with the protagonist not because they're in love with him, but because of debt or gratitude, that creates another problem: what happens to those girls that aren't the focus of the particular route? Do they find another solution to their problems? Are they forced to suffer in the background?

I would much rather read multiple stories of multiple couples, with maybe something like a love triangle, rather than have one central protagonist with multiple heroines orbiting his dick.

Pretty weird thing to care about one or the other. Either approach can work fine. Although due to the organization of eroge into character routes they're more fit for a single protagonist.

OG? yes, it does not require any previous knowledge, as every character is original and the story starts from 0 (even though it may not look like it... a lot of stuff is thrown around like it's referencing previous shit, but everything is explained sooner or later)
If you want to play a non-OG entry... you should at least know your gandamu.
