So today was my first time playing Touhou (EoSD). I'm used to FPS like Quake, that can easily be described as frantic. This is... different. I couldn't stop thinking "JESUS FUCK AOEUAOEUAOEU"

I got to 62% on normal on my first try.

So, tell me, how does a game like this spawn a meme like "take it easy"?

Your first is also not that much above average. Touhous is all about learning about it's mechanics and tricks, and then practice.

Something to keep in mind:
No matter how many bullets there may be appear to be, over half the screen is always free space. At least hitbox-wise. On Normal. Go watch some Lunatic replays and weep.

This. I used to play a lot of Quake (even semi-"professionally") and for skilled players it's more like a rhythm game than an FPS. I still have how to strafe through every map embedded in my muscle memory.

Touhou is different though in that the patterns change. You will not be able to pull off the *exact* same thing twice. You need to learn the various spell cards and find an effective way to beat them. Usually they're a lot harder than they look too (Reisen's spell cards were the hardest thing ever when I first played IN, but once you get the gimmicks they're some of the easiest in any game).

Combat and "the rest of the game" are separate, especially in duels. Played a guy on DM6 once, he completely locked me out- I had all items but couldn't get to him.

Actually this is why EoSD is a poor choice of game for beginners. In the later game focussing by holding SHIFT will show your hitbox, but in EoSD it doesn't (though it's quite easily to get the hang of where it is). Someone made a "hitbox patch" that turns it on permanently, but it's not really as useful as it sounds.

I'd honestly suggest playing PCB or IN first. Both are regarded as some of the easier Touhou games, and once you master them beating EoSD should be a lot easier.

I'd argue the opposite. Having it there can form an initial over reliance on it and shift the player's gaze too close to where it shouldn't be. It's not just about knowing where your hitbox is, but feeling where it is too.

You'll get used to the franticness after a while. But it's still there sometimes, I'm playing since almost 8 months now regularily and when bullets appear vertically as well as horizontally I get into a panic often enough.

Try the vsync patch out, not sure where you can find it but Google should be able to help you with it. Among other things, it can fix a game's FPS to 60 if you're having issues with it.
