However, he's far too slow (even with the dual weapon speed feat and all three ranks of that speedup shout) to ever combat a Servant on even grounds. He might be able to engage one for the duration of the Slow Time shout, but he has to defeat it entirely in that short timeframe.

The speed behind any weapon moving at faster than normal while everything else is doing the opposite, would easily run through a servant. You could probably bisect one with a spoon that way.

As much as I don't like to argue in favor of FSN, in a powerlevels thread no less, servants can bring in city-destroying tentacle beasts from other dimensions, destroy all magic on a person with one hit from an ancient dagger, rip a person's heart out from a distance, move faster than human vision allows to track, reverse causality, survive sure-kill techniques, continue to live even after being killed 8 times, swing a sword so fast that it disobeys the laws of physics and causality, etc.

The dragonborn is much too strong for his own game, with only the slightest of implementation of smithing or alchemy allows him to completely steamroll through any obstacle in his easy game, even on Master difficulty. This is because all of his opponents are too weak.

If the weakest servants could be considered, I still don't think it holds up enough weight. Saber can survive the sure-killing attack of Gae Bolg, but she still concedes that being struck with Assassin's technique on flat footing would kill her. In Skyrim enemy mages who can hurl balls of fire one after another without cease kill most dragonborn in very short amounts of time if he isn't invisible and invincible via potions and enchanted armor. FSN caster's ability to create balls of fire far surpasses that of the random pyromancers findable in the ruined castles of skyrim.

Weak, my potions makes my character with 9999999999999999999999 times more Str, Int and health (speed brokens the game) for infinite time.
Although, every melee weapon breaks with one hit.

Yes you can. You can use potions to fortify enchanting, then enchant a fortify alchemy ring, then use that ring to make a stronger fortify enchanting potion, repeat until you hit the cap.
