During the Fourth Grail War, Emiya Kiritsugu (Saber's Master) shot Kotomine Kirei (Archer's Master), ending the Grail War. Kiritsugu realized the Grail was the ultimate World Troll, and used his final Command Spell to order Saber to destroy the Grail. Although Saber succeeded in destroying the Grail, Gilgamesh managed to taint himself in the Grail's pollution before its destruction.

The Grail is supposed to taint whomever bathes in it with "All The Sins Of The World" but Gilgamesh's ego was so prevalent he managed to come out relatively unscathed.

Gilgamesh fanboys claim that the Grail actually did corrupt Gilgamesh, in light of the Manner Thrugh Which He Kept Himself Alive in the ten year interim between the Fourth and Fifth Holy Grail Wars, and his Lewd Intentions Towards Saber. But the truth is that Gilgamesh was always kind of a tremendous douchebag.

Well, I'll do Heaven's Feel.

Working together with Servant Rider, who along with Illyasviel von Einzbern noticed Emiya Shirou's Slow Descent Into Insanity, Shirou manages to prevail against Saber Alter, who was corrupted by the Holy Grail. Realizing he has Little Time in which to Act, Shirou straddles Saber Alter and holds the knife above her heart.

...

He is unable to kill her. Staying True To His Belief that everybody can be saved, he does not take advantage of his position. Saber Alter finishes regenerating, and for the First Time hates her Former Master. About to kill him, she is interrupted in her aim and summoned back to Matou Sakura for an, at this time, Unknown Reason.

Progressing to Matou Sakura, the woman Emiya Shirou loves, he is appalled to realize that, due to Saber Alter's intervention, Tohsaka Rin was unsuccessful in defeating Sakura, her Sister. Crushed to realize his Altruistic Beliefs failed to save both his Former Servant and his Friend, Sakura tells him that she is making Rin suffer through All The Torments through which she herself suffered when she was first sold to the Matou Family.

Matou Sakura proceeds to consume Emiya Shirou, where he spends the Rest of Eternity sharing indescribable torment with his friend Tohsaka Rin.

People call this a Bad End, but honestly, this is my favorite Heaven's Feel end.

Gilgamesh was not and cannot be "corrupted", but the influence of the grail distorted his jackassery to a slightly higher degree.
He can carry all the evils in the world (where basically anyone else would be crushed and die, and other heroes fall to their knees and become corrupt), but he's not perfectly IMMUNE to it.

In Heaven's Feel, Sakura took him into the Shadow then tore him apart with the shade giants. She could not corrupt him, and if she tried to wait and "digest" him into prana, he would have torn his way out of the Shadow by force. She basically had to ambush him when he let his guard down and execute him immediately.

She then ate his remains for all the prana she could get (much less than if she could have "digested" him).

Vikings, roughly 700-1000 AD depending on the proper definition of "vikings", but not earlier.

Scathach? Not sure, but possible. Don't think it was mentioned - understandably since at the point in the story where she appears, Scathach is already at least middle aged.

But yes, there were others. Celtic myth is full of blondes and redheads, although it's hard to separate which of them are described as having actual blonde or red hair, and which have "fair", "golden" or "flaming" hair as an indication of some divine heritage or special destiny.

Ferdiad would be a main heroine with multiple personalities, one manly warrior man one, and one clumsy deredere girl one. During the early part of they game, they'd be in struggle with the other half, in a contest for Cu Chulainn's affection. The man half would be in a completely platonic manly warrior man bro way, of course, where as the girl half would be in the usual way of stories involving Cu Chulainn.

Of course, once the plot gets to the Tain part of the story, at the battle in the ford, depending on how what choices you've made, Ferdiad either dies, or only the manly man Ferdiad personality does.
