Actually the yukkuri have a super dense sugar core in their center called a paste core. When they are tortured or frightened it is postulated that they undergo a fight or flight reaction that causes their body to begin metabolizing the paste core and sweetening their overall paste. It's thought that this is to invigorate their body so they might better escape from whatever is causing their troubles but it usually just gets them eaten.
