There will be a whole batch.
Currently from the demo there are two, Kyouko Kasodani and Yoshika Miyako. There will probably be at least 4 more in the real game, if not more than that as midbosses.

Yes, she's a Jiang-shi. But ZUN's notes say she's more like a zombie, and has trouble moving her joints.

Yoshika Miyako is the Jiang-shi. Her ability is the power to eat anything and everything. Because of ZUN's note, most people treat her like a cute zombie with a stiff body.

Kyouko Kasodani is a Yamabiko, the voice which calls back to you (an echo). Her ability is the power to reflect sound waves. It seems the fandom has become fond of making her repeat things said to her.

Name and Concept

The characters for Kasodani literally mean "Ghost Valley", and Kyouko "Echoing girl". The 2 kanji characters for her surname are separated from the 2 characters for her name, but if you put them all together minus the last kanji, you will get the ateji spelling of "yamabiko" (幽谷響), the name of her species, which is now normally spelled as やまびこ or 山彦.

The "Miyako" (宮古) in her name means "ancient palace", while "Yoshika" (芳香) means "fragrance", "perfume" if read together. The "Yoshi" (芳) can also mean "fragrance", "beautiful", "virtuous" when standing alone, and "ka" (香) "incense", which might be referring to either Yoshika being a jiang shi, or her guarding a graveyard.

Ho-boy, that's a bit of a loaded question.

Some folks at least want Mima to show up in Ten Desires, and some of the minor prologue text hints remotely at such a possibility.

But as of now there really isn't anything that says she'll show up, and frankly its kinda doubtful.

I'm kinda conflicted about PC-98 folks coming back though. On one hand, it'd be nice for ZUN to acknowledge them again, and the boost in popularity would be nice. But on the other, TD has already reused Yuyuko and Kogasa. We get many more repeats and people are going to start getting frustrated over the waste of so many new potential characters.
