Probally because Fairy wars and the 3 fairies manga are highly related to each other.
If you read the manga and then suddenly play the game with ZUN art it just wouldn't fit

He's got much better since he started making the games, just compare a drawing of Reimu from one of the first games with a drawing of Reimu from one of the most recent ones and you can see that clearly.
Besides, I like his style. I'd rather have the drawings he does than those generic doe-eyed anime style girls like you see all over the internet.
