I know you probably get this thread every day, but whatever.

I'm interested in learning japanese.
I know it will take dedication, I know it will probably be hard, but I have the time, so I might as well learn something I'm interested in.

What I need is resources. And if possible, some guide, or anything that would give me a clue about what to learn and when to learn it.
I need structure in my studying, otherwise, knowing myself, I probably won't be able to learn anything.

Can /jp/ help me?

A lot of time and a lot of dedicated effort, and you will learn enough to be able to read a VN or any Japanese material without too much trouble. Taking classes would help, but not really necessary. Living in Japan or watching Japanese shows and anime in raw will help improve your verbal and auditory skills in speaking and understanding. That being said, I tried to learn it myself and gave up after about a year of effort. It's just me though.
