Marisa is a human Magician.

Patchouli, Alice, and Byakuren are youkai Magicians.

Marisa can become a Magician-type youkai if she so chooses, but is still human so far.

I believe the canon is that she has a father who lives in the human village as a barter store runner, but she didn't want to be a salesman so she became a hermit magician. But nobody cares about canon.

Youkai are hard to describe. Supernatural beings strong in magic, typically considered monstrous and evil, though most are friendly in Touhou.
Magician type youkai are either youkai formed naturally of magic, or a human magician who has developed past humanity through surviving by eating/breathing magic alone. They live much longer than humans, but probably think much differently too.
Patchouli is believed to be a natural Magician-type, Alice and Byakuren are both known to be humans-turned-Magician.

Marisa Kirisame is a magic user, a human student of magic. Patchouli Knowledge is a magical creature with an affinity towards magic and spells. Alice Margatroid was once human, but through mastery of magic gained an extended lifespan (quasi-immortality?) and thus lost her human status. It is possible that Marisa may attain this state in the future, but as long as she's a main character and thus unaging anyways I rather doubt it'll happen

The "think differently" thing probably goes for all supernatural creatures, but Alice was once human and so probably still thinks like one. As time passes, however, she'd probably develop certain eccentricities, at least if she spent most of her time in isolation.

Last night I had a dream that I was tasked with gathering a special kind of berry or something for Marisa. I did and she made a weird brew and told me to drink it, which I did. The brew cause my body to enter a sleep stiffness-like state. After, she stepped on my penis a couple of times and asked, "How does that feel, ze?"

Then I realized something. Marisa does not say ze. SHE DOESN'T FUCKING SAY IT! I became aware that I was dreaming, so I harvested the power of dreams and become the almighty master of dreams and ruler of dreamworld Gensokyo, Marisa was my bitch who did not say ze and would hold my 7000 children, and Remilia and Flandre were my slaves.

I had a dream like that once. I was forced by Youmu to garden with a butter knife and a dildo. Yuyuko was so kind to me, she gave me food and shelter, but she had no idea of Youmu's cruel-doing. But then I soon became aware that if this was really reality, then Yuyuko would have eaten me. I imagined a flaming flying motorcycle, picked up Iku and Aya, and rode into the distance.

Mima gave birth to Marisa but died in childbirth. Marisa would inherit her mother's aptitude for magic, but her father came to resent her as the cause of his wife's death, forbade her from using her natural talents because it was a reminder of his loss. Being fostered in this loveless and oppressive household doubtlessly led her down the path of delinquency. Before she could become a magical thief and con, she was only a mundane thief and con; with not even her family to defend her, she was booted out of the village for a multitude of petty crimes.

Mima, now as a ghost and bound to the world by regret and unfulfilled dreams, takes her in, tutors her in magic, and later takes her on adventures. When Mima decided there was nothing left she could teach her, she figuratively casts Marisa out into the world to forge her own destiny. Without any binding regrets, Mima fades from the world and is returned to the Karmic cycle. Marisa builds her mansion in the forest or, more likely, she inherits it from Mima.
