What's the best textbook for self-study of Japanese?

If you're a beginner, I'd go with Genki. It won't give you everything, but it's a start.

Really? Alright, I'll give the series a look.

Basically, I'm looking for the most intensive, rigorous book I can find--I have significant experience with other Asian languages.

Go with http://www.guidetojapanese.org/learn/grammar then. It will just give you everything you need to know with no unnecessary bullshit and dumped down concepts like you'll nearly always encounter in textbooks.
