I plan to write a fanfic centering around Yuyuko and Youmu, and featuring other characters from PCB. However, I don't know much about these characters. What official translated books, manga or other material can I read to get a good idea about these characters? Some fan works will be nice, but I'm mostly interesting in the real deal.

The characters alredy have a personality shaped that can be seen on the game. You can, as an alternative, read as much doujin as you can find, it'll give you a base of what the characters look like for the fanbase.

Don't worry about that, though. No fanfic I've ever read suggested their writers worried about characterization, canonical or otherwise. And it's Touhou, characters can literally be whatever you want them to be.

Besides the game dialogues and character profiles, you can't go wrong with reading their entries on BAiJR and PMiSS. Youmu has a nice appearance on CoLA as well.

...this reminds me there is a Yuyuko trait that, for some reason, almost no doujin art/fics notice: the fact that she covers her mouth with her sleeve most of the time.

It's a pose that fits her role as a high mistress, but she doesn't do it so often. Not in PCB, and maybe once or twice in IN. I can't remember her poses in the ending scenes, though.

Also OP: Don't feel restrained by the official works. That's exactly why we have derivatives in the first place. /jp/ will never admit it but they thrive on Touhou fanworks, which are basically the same thing.
