Touhou will never die. But ZUN will, someday.

What will happen next? I'm pretty sure that these three things will happen;

First, there will be so much commercial touhou stuffs that you will find everything starting from self-claimed TH sequels to touhou porn.
Second, some STG nazis claiming touhou is shooting game and nothing else would be butthurt and leave the scene.
Third, it will eventually become some kind of money cow franchise like Gundam.

I'm quite sure it won't be STG. It's well known fact that more than half of people in Touhou fandom hadn't even played Touhou STG.

Hell, some even openly say Touhou as STG is crap, which is not totally bullshit, but is obvious trolling to old fans.
