Quick rundown of the issues under Wine on Linux:
- EoSD may have a framerate problem where it runs at excessive speed. Vsync needs to be turned on.
- PCB may have a control issue unless an option is set via custom.exe but otherwise works perfectly.
- IN should work perfectly.
- PoFV sometimes freezes, and under recent versions doesn't work when patched.
- MoF/SA/UFO need d3dx9_36.dll to render some text, but no longer depend on it to run.
- DS/GFW need d3dx9_36.dll to display some graphics and text, but doesn't depend on it to run.
- IaMP's English patch won't work, nor does its configuration application, but the game itself has no problems I noticed.
- SWR/Hisoutensoku don't work on NVIDIA cards because of a driver bug. Partly works on ATI. Dunno about OS X.

I don't know what applies to Crossover.

Back when I had Crossover I had little to no trouble with EoSD, PCB and UFO.
Now I just use VMWare Fusion, and... actually, now PCB glitches up a tad, but little difference otherwise.
There used to be a site I know that made Touhou Mac Ports, but it went down recently.

I have no trouble with Wine except for PoFV and SWR/Hisoutensoku. The solutions I mentioned are basically set and forget, and no worse than your average Windows hack-around.
