They do, a regular human in the village can beat 90% of Youkai.
It just seems to me that it's not based off of actually taking the time to understand the mechanics of magic as it is reading a book, being able to remember parts of a book, and poof, you know it. It begs questions such as "Who wrote the book" but it just seems like Pach, who knows the most about magic out of everyone we've seen in Gensokyo, doesn't know simple principles of physics like Gravity and Pressure and instead is assuming that since she read the children's book on the Apollo landings, she is now 100% able to launch and field a spaceship of her own. There's no reason why she SHOULDN'T think that if she has never had to question why her magic works or why her books are the complete truth about magic.
