All right, so here's the thing... I've never played Fate/Stay Night before and wish to do so now. What did you guys think of it and would you recommend it?

Also, I've heard that it has 3 different routes. Now can i just start with whichever one I want or what?

It is okay. Don't expect world literatur, good h scenes and much sense.
3 Routes, you play one after the other. Fate - UBW - Heavens feel. Flow Chart is included, which will answer all your questions.

The only thing I didn't like is the plot, which seemed rather convoluted to me at times. However, it is usually pretty easy to follow.

Read Heavens Feel, it's pretty good.

Expect discarded ideals, lots of Sakura (if you thought she was bad before you don't even know the half of it), and a long reading time.

But it makes up for it in pure concentrated badassery.

But it's not as if Shirou tried any less or anything in HF. In HF a situation was brought up that would strike against his ideal no matter what he did.
Archer didn't think Shirou could do anything else, but Iliya knew the other choice was impossible as well, and she was right.
And in the end both choices are damaging to the ideal, but they are also the only choices available as being indecisive most likely would end up saving no one.

Because of this, what is right or wrong according to the ideal is already moot as both are wrong, and there is no "less" or "more" wrong here, both are simply wrong, the ideal wasn't to save as many as possible, it was to save everyone, and when everyone aren't saved the ideal is crushed and things become more complicated.

People were going to die, in fact they were already dying, in that sense he had already failed. And all his available choices would result in more death.
This forced him to think about who.
Archer said Sakura because of quantity and chance of sucess, and as the sacrifice would be bound to no more than 1.
Iliya said trying to save Sakura despite the risk of people getting killed, and she deemed Shirou to not be one with the strength to kill, especially loved ones.
So she basically explained how the most natural and defoult choice is to protect ones loved ones, and how Shirou should simply do his best to prevent further casualties if he wishes to prevent further deaths.

In the end it boils down to priorities, and wether or not the the end justifies the means etc.
In Fate and UBW he wasn't forced into such a situation, he was just confronted of the theory of it by Archer, and Archer's conclusion was that Shirou is to weak to do what he did in HF, but Shirou refused to give up saying that it is in no way wrong to try until the end even if one doesn't succeed.
UBW is happier, and there is a lot of bullshit going on in HF, and I prefer UBW and I recognize that there is bullshit going on in HF, but Shirou and his ideals aren't it.

Rider was completely obliterated by Excalibur in Fate, and in UBW... Shit, I can't even remember. I don't think she was actually killed in HF while being brought back by Sakura, but then it was a while back.

Also, Archer was injured by Saber early on in Fate, and wasn't really up to his full potential for any of that route. I think if Gil could have spanked Berserker as easily as he did, there's no reason Archer at his full power couldn't have.

I thought it was pretty clear that Zouken had no interest in a "normal" grail war and that HF was the only route that met his requirements.
