It's simple. She probably wasn't loved by her father and felt terrible about it. She couldn't direct the hate at her father, so she used Kaguya as a hate-object for her miseries. When Kaguya humiliated Fuhito, it was the perfect opportunity to let that bottled-up steam out.
She persuited Kaguya, and later became immortal while she was at it. It's ironic that her rage is what made her live forever, even though it was all misdirected. She can never get her revenge, because it isn't really Kaguya who made her miserable in the first place; it was her one and only father she defends so dearly.

Basically, an artist by moniker Mitsumoto did a series called Night Sparrow Love, wherein due to a few changed circumstances (Mokou does Charcoal instead of Yakitori, Mystia isn't a Sapiophobe) Mystia falls in love with the girl who brings her charcoal every month.

This is, of course, Mokou.

The story's a little contrived, but it's a decent read, and the artstyle is very good. Just google the name.

Amusingly, while they cannot die they can still be killed. Immortality for the Hourai users means never staying dead rather than being able to survive any kind of damage.

Also, I personally think Mokou just uses the phoenix motif to go with her immortal status similar to how Sakuya has 'Killing Doll' and Chen has Red and Blue oni as a spell. It has no real deeper meaning or anything.

It might also symbolize how she nearly died before being rescued by that guy (who she killed) and then being reborn as an immortal (near a volcano no less).

Where her fire powers came from? Who knows, a thousand years gives you a lot of time to learn magic I suppose.

I don't think Mokou cares about the whole "Kaguya humiliated my father!" case. If anything, her actions seam to indicate that it's mostly behind her.
She still hates the princess, though. But not to the extent where she'd go out of her way to assassinate the Kaguya. Her actions seem to indicate that she doesn't have any sort of grudge against the other folks at Eientei, either. She doesn't talk much to normal folks, either.
Overall, she's a really cool person.

I'm trying to remember that single comic I read where Meiling turned out to be the Hakurei Shrine God, and Reimu's ancestor.

Turns out she'd turned human or something (Usual Meiling = Dragon shite) and became a shrine maiden to help make Gensoukyo while her dragon husband and Yukari built the great barrier. Gave birth, raised the Hakurei line, fell asleep as a dragon under the misty lake.

Got woken up by Yukari again so she could contain the Vampires (Their condition for staying in Genk was to be under house arrest) as their gate guard, and engineered the Scarlet devil incident so that Reimu could tame them and let her take it easier. Hence why Meiling was a mid boss that led you to the Mansion while you were still lost in the mist.
