It can be cooked in many different ways, and the color of it can change too, depending on things like the spices used. Its taste can even vary wildly depending. Keep trying. Maybe you'll find a place that serves some the way you envision it. I have a family friend who lives in DC, and by his apartment is this fantastic restaurant that served some that looked just like you are thinking of. My mother is Chinese, and she also makes some sometimes, but it looks a little different, and tastes different (she makes it less spicy because my dad is white and a baby when it comes to spicy foods).

Japanese styled Mapo tofu is shit.
Basically it's just a remotely spicy soup made of starch and some tofu hidden in it.

Next time buy some bags of spicy-bean sauce and tofu to do it yourself.

What's the general recipe for making a curry using the Japanese curry boxes you can buy?
Since I'm just currently cooking some meat, then dumping it in a pot full of water, vegetables, adding the curry blocks and leaving it to simmer for a long time.

Yeah whenever I make mapo tofu it ends up like this because I actually stay closer to the chinese recipe.

All you really need is ground pork, tofu. garlic & chili sauce and some duck sauce, but I throw in some black bean & garlic sauce too.

Well my friend used this, well not exactly this but it's the same stuff, curry in a small glass tube/jar/whatever... I tried to find any kind of curry boxes, but there none to be found in the 5~6 or so super markets in my town.

The only other thing I found was some sort of Thai Sour/Sweet curry mix in Lidl(German budget store)

Instead of ground beef use beef cut into 1" cubes and properly brown them before adding them to the curry - it's a big part of the taste.
And don't be afraid to experiment with different recipes - find out what works best for you.
There are seriously many ways to make curry, even Japanese curry has different varieties - sticking to just one recipe from the start is a waste.
