Have you read anything by Water Cushion, Ennui Akado, Winter Scenery, Can't Fix The Helmet, Karaagetarou, RED SiGHT, Strange Chameleon, Haniwa, Flip-Flops or SakuSakuTei? Those are the good non-grimdark circles I can think of at the top of my head. I'm sure there's more.

There's a lot of good Touhou doujinshi that isn't grimdark. You're just not reading enough.
