Okay /jp/, I played TouHou the other day for the first time at my brothers house. I loved it.
I want to start playing, but from what I can see there's about 12 or 13 different games
What do I start with?

Perfect Cherry Blossom. Best characters, best game balance. Not overbearingly difficult like Subterranean Animism, but not underwhelmingly easy like Imperishable Night.

Anyways, I recommend the seventh game, Perfect Cherry Blossom. It's one of the easier ones while maintaining a variety in shot/bomb types and characters, and though you get more lives handed to you than others you don't develop the bad habits that Imperishable Night gives you.

Everyone else is just opinions in here. It's best to start from the lowest difficulty, going to the highest. You should start with 2, and then move up from there, even though some of the bosses from 2 are harder than 3.

when I started playing Touhou about 2 years ago I was under the impression that bombing made you a weak person and it was to never be done.

As a result, I find it incredibly hard to bomb even when it'd be a good move. My advice is to NOT learn like this...just now I'm getting into the practice of bombing when I'm backed into a corner but it's still really hard to figure out that exact perfect time.

Also, learn where your hitbox is. The game became 10x easier when I did that.

As for which one to start with, I'd say 6-8 or 10 or 11. 11 is hard though.

This. It's the first Windows game and the one most people started with.

The characters and the Scarlet Devil Mansion setting seem to be the most popular amongst Touhou fandom as well. You get to fight Cirno, Mei Ling, Patchouli, Sakuya, Remilia and Flandre. Besides the first stage boss, all the bosses are very well known characters.

The only reason I can see for not playing it first would be the difficulty, but it's not too hard. The only real problems are that you don't get enough lives in practice mode and that there's a jump in difficulty when you get to stage four.

Aya is hard until you get used to the whole MoF concept of BOMBINGISCHEAPBOMBFUCKINEVERYTHING.
Capturing her spellcards though is another story, as it actually requires practice.

There's your problem with "never even 1CCed anything".

Mountain of Faith has the blessing/curse of a gynormous amount of bombs due to its bombing system. So when in, say, EoSD you said "ok, I'll keep this bomb until that spellcard I find hard or in case something hits me", in MoF you pretty much say "oh fuck I don't feel like dodging this one, I'll bomb". I mean, you'll get your power back later anyway, there is nothing to lose (except the spell bonus). Plus, if you keep the right range from the boss, MoF bombs are as effective as IN's deathbombs during spellcards.

Aya on Lunatic is just Aya on Hard: a bit faster edition.

Her nonspells can be point blank bombed, and they're all actually easy. The second one (fast onion rings) requires a bit of muscle memory though.

If you do start with game 6, Embodiment of Scarlet Devil(Tip: Type "Touhou 6" into the pirate bay for an english version all you have to do is extract) with a retexture mod. Or Touhou 7(Perfect cherry blossom).

Also, real men don't use mods to hack the game and make their hitbox visible(It's pretty much where the belt would be on your characters) and keep the original sound files(I think you still have to write over the original sound files with the "EOSD" sound files with the retexture patch".

Also, Play Hisouten, the 10.5th game in the series, Scarlet Weather Rhapsody. It's a very fun fighter and is worth playing.
